Last night I got home and after a very frosty day I really felt like some nice hot food to warm me up. I have tried this recipe before and knew it would be perfect… a big task for starting cooking dinner at 7pm on a school night, while trying to get the kids to sleep, but hubby was on hand to help.
I have also been thinking of what my Christmas meal will be this year, and this could be a great addition.
- 1 tbsp vegetable oil
- 1 small onion, minced
- 3 cloves of garlic, minced
- 2 medium portobello mushrooms, finely chopped
- 1 medium carrot, grated
- 1 can kidney beans, rinsed
- 1 can green lentils, rinsed
- 1 tbsp tamari soy sauce (gluten-free) *
- 2 tbsp mixed dried herbs
- 4 tbsp nutritional yeast **
- 135 g gluten-free oats
- black and salt pepper to taste
* Tamari Soy Sauce – Regularly used, soy sauce contains wheat, however now you will find more recipes calling for Tamari which is a gluten free option for soy sauce. Both are very similar in taste and colour, which makes them interchangeable depending on your personal preference. Another interesting fact is that soy sauce is mainly used in Asia, while Tamari is used in Japan.
** Nutritional Yeast – this is gluten-free and used in many vegan recipes as it is fortified with vitamin B12, which is the only vitamin that is not found in any plant-based items. It gives a great cheesy, nutty taste, made from primary inactive yeast, without artificial additives or preservatives. Vitamin B12 is important to help your body produce red blood cells and should be taken regularly to avoid deficiencies which can cause anaemia.
- Preheat over to 180c (350f) and line a loaf tin with greaseproof paper.
- Heat oil in a frying pan and saute the onion and garlic until soft. Add the mushrooms and carrots and cook for another 5 minutes until softened.
- Add all other ingredients and use a masher to combine until all ingredients come together (if needed, add some water to ensure the mixture is not too dry).
- Transfer the mixture into the loaf tin and cook for 40-45 minutes until the loaf is firm and slightly crisp on top.
This goes great with roast potatoes, which we cheated on and cooked in the air fryer… it was a quick last minute addition to our rushed dinner, added with some steamed green vegetables and a gravy… it was all yummie!!!!!
PS – Any leftovers?!?!?! Its great with chips and a huge salad the night after 🙂
